The Romans and Hebrews historically were known to make a drink using apples and fermented juice. Julius Caesar was said to have embraced Cider as an alternative to vinum. Cider was the drink of choice for the larger population of Britain in the 17th Century.
Apple Cider was being consumed in America in the Colonial period up to the middle of the 19th Century. History shares with us the tradition of Cider through the English settlers who brought with them apple seeds to plant orchards in the New World. Remember the legendary Johnny Apple Seed? He sold seeds and planted orchards all over the Midwest. Cider was a normal first drink of the day by most of the population. It was easier to make than beer or wine and safer to drink than water. In the early days when someone mentioned Cider, all knew there would be a little fermentation kick as they consumed their beverage!
Cider's popularity was interrupted with the Prohibition, by immigrants with a taste for beer,
pests and difficult winters which killed many orchards. In the past 25 years the comeback has been slow until recently.
